Fiber is essential to your digestive system. No fiber= a sluggish metabolism, and constipation.
Because most veggies are so low in fat they are also very low in calories (An entire head of lettuce = about 100 calories) and when you pair that with high levels of vitamins and fiber, veggies will still be healthier than cheeseburgers and chips even when you add enough butter or cheese and seasonings to make them tasty to someone who's not used to them.

The main vitamin concerns for vegetarians/vegans are the B vitamins and proteins and, in women, iron.

Follow the vegan food pyramid which emphasizes fruit, green vegetables and whole grains. There is such a wide variety of foods available to satisfy any vegetarian palate. Cooking at home ensures a healthier diet since you can control what goes into your meals.
Eat lots of small meals/snacks to maintain a steady energy level throughout the day, drink plenty of water.

Orange and Avocado Salad

Ingredients

8 cups mixed salad greens
1 cup orange segments
1 avocado, diced
1/4 cup slivered red onion
1/2 cup Cilantro-Lime Vinaigrette

Cilantro-Lime Vinaigrette:

1. 1 cup packed cilantro
2. 1/2 cup extra-virgin olive oil
3. 1/4 cup lime juice
4. 1/4 cup orange juice
5. 1/2 teaspoon salt
6. 1/2 teaspoon pepper
7. 1 pinch minced garlic
1. Puree cilantro, olive oil, lime juice, orange juice, salt, pepper and garlic in a blender or food processor until smooth.


2. Toss greens, orange segments, avocado and onion in a salad bowl. Toss with Cilantro-Lime Vinaigrette.
